  • Add the tomatoes, gnocchi, and broth to the pan, and stir well to bring to a boil. Reduce the heat to medium-low, cover, and simmer for 5 minutes.
  • Remove from the heat, and add half a cup of cheese and cream, stirring well. Add scallions and cheese, and melt the cheese in the oven for around 3 minutes before serving.

  • 15g chopped porcini mushrooms

  • Preheat the oven to 400 degrees F, and add two tablespoons of oil, cherry tomato, salt, pepper, and garlic, and toss well so that the tomatoes are coated. Roast for between 10 and 15 minutes, remove and allow the tomatoes to cool.
  • Add half of the tomatoes and the garlic to the blender, along with the walnuts and the rest of the oil, and pulse until smooth. Add the parmesan, red pepper, and oil and pulse until well blended, adding salt if required.
  • Bring a pot of salted water to a boil and cook the gnocchi. Just before draining, save half a cup of water, drain the gnocchi and add it back to the pot.
  • Add the zucchini and toss well, and then add half the tomato pesto, the roasted tomatoes, the basil, and the corn. If required, thin the sauce with the water.
  • Serve with feta and a poached egg, sprinkle with salt and pepper, and enjoy.

  • 1 16-oz. package potato gnocchi,
  • 3/4 cup all-purpose flour
  • 2 large eggs
  • 3/4 cup Italian seasoned bread crumbs

  • 3/4 tsp. salt
  • 1/2 tsp. pepper
  • canola oil, for frying

  • Add the gnocchi to a pan of boiling water, cook well and then drain and let cool.

  • 2 ½ lb lobster cooked and meat removed – keep the shell
  • ½ onion medium-large
  • 1 carrot large, approx 100g

  • ¾ cup heavy cream
  • 1 tsp cornstarch or cornflour
  • 1 oz parmesan 25g, grated

Directions

  • Peel and chop the potatoes into chunks and add to a pan of water to boil. Once boiled, reduce the heat to a low boil and cook for between 7 and 10 minutes. Drain, mash and set to one side.
  • Start the lobster sauce by tossing the shell over medium heat for a couple of minutes.
  • Dice the onions and carrots, add water to the pan with the lobster shell, and then add the carrot, thyme, and onion to bring to a boil, and then reduce to a simmer. Cook for between 10 and 15 minutes.
  • Cook the gnocchi in the pan.
  • Once the carrots are cooked, remove the lobster shells and blend the stock-vegetable mixture before adding cream and simmering for a few minutes. 
  • Add the parmesan and lobster, and stir well while cooking for a minute or two.
