  • Add the rest of the oil to a skillet over a medium heat, and add the breadcrumbs, garlic, almonds, salt and pepper, and red pepper flakes, and cook until lightly toasted.

  • 2 tbsp olive oil divided
  • 2 salmon filets
  • 1 onion – 
  • 4 garlic cloves
  • ¼ cup white wine – 
  • 1 can diced/pureed tomatoes 
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp capers
  • 1 ¼ cup heavy cream
  • 1 lb uncooked potato gnocchi
  • 1 cup fresh spinach

Directions

  • Add a tablespoon of oil to a pan over medium-high heat, and sear the salmon for 4 minutes on each side. Add to a plate, and tent with the foil.
  • Chop an onion and 4 garlic cloves, and then add a tablespoon of oil. Cook the onion until soft, and then add the garlic and cook for 30 seconds before adding the white wine and allowing the mixture to simmer.
  • Add the tomatoes and a teaspoon of Italian seasoning, along with half a teaspoon of salt, a quarter of a teaspoon of black pepper, and two tablespoons of capers.
  • Uncover and cook for 5 minutes over medium to high heat, and stir regularly.
  • Add the cream and gnocchi, bring to a simmer, and cook for 5 minutes.
  • Remove from the heat to stir in the spinach, add the cooked salmon, and serve.

  • 1 tbsp butter
  • 1 package potato gnocchi
  • 1/2 lb lean ground beef

  • 2 cups diced onion 
  • 3–4 cloves garlic, minced

  • Add the butter to a pan, and melt over medium heat. Add the gnocchi and cook for 2-3 minutes, shaking the pan gently throughout. Once cooked, remove the gnocchi to a plate and place it on one side.
  • Increase the heat, return the pan to the stove, and add the beef. Season with pepper, cumin, paprika, salt, and mustard, and then add the onion and garlic. Cook for a few minutes until golden, and drain.
  • Add the tomatoes, gnocchi, and broth to the pan, and stir well to bring to a boil. Reduce the heat to medium-low, cover, and simmer for 5 minutes.
  • Remove from the heat, and add half a cup of cheese and cream, stirring well. Add scallions and cheese, and melt the cheese in the oven for around 3 minutes before serving.

  • 2 tbsp olive oil
  • 1.25kg beef steak in chunks
  • 1 brown onion chopped
  • 2 carrots, peeled and  chopped
  • 2 celery sticks, sliced
  • 2 garlic cloves, crushed
  • 375ml Beef Stock
  • 400g can tomatoes, diced
  • 15g chopped porcini mushrooms
  • 2 bay leaves
  • 500g gnocchi
  • Chopped parsley leaves
  • Grated parmesan

Directions

  • Start by adding a tablespoon of oil to a pan over medium heat, and cook the beef for 3 minutes before transferring it to a plate.
  • Reduce the heat to medium and add the remaining oil. Cook the celery, carrot, and onion, stirring occasionally, for 5 minutes, and then add the garlic and cook for another minute.
  • Add the veggies and beef to the slow cooker and add the tomatoes, mushrooms, beef stock, and bay leaves. Cover, and cook on Low for around 7 hours.
  • Stir in the gnocchi and cover, and then cook for another hour.
  • Add parmesan and parsley to serve.

Ingredients

  • 2 pints cherry tomato
  • 1/3 cup + 2 tablespoons olive oil divided
  • Salt + pepper
  • 2 cloves garlic finely chopped or grated
  • 2/3 cup toasted walnuts
  • 1 tsp lemon zest  
  • 1/2 tsp crushed red pepper flakes
  • ½ cup grated parmesan  
  • 16 ounces potato gnocchi
  • 1 peeled zucchini 
  • 2 ears of grilled corn kernels
  • 1 cup fresh basil roughly torn
  • 6 ounces feta cheese crumbled
  • 2-3 poached eggs

Directions

  • Preheat the oven to 400 degrees F, and add two tablespoons of oil, cherry tomato, salt, pepper, and garlic, and toss well so that the tomatoes are coated. Roast for between 10 and 15 minutes, remove and allow the tomatoes to cool.
  • Add half of the tomatoes and the garlic to the blender, along with the walnuts and the rest of the oil, and pulse until smooth. Add the parmesan, red pepper, and oil and pulse until well blended, adding salt if required.
  • Bring a pot of salted water to a boil and cook the gnocchi. Just before draining, save half a cup of water, drain the gnocchi and add it back to the pot.
  • Add the zucchini and toss well, and then add half the tomato pesto, the roasted tomatoes, the basil, and the corn. If required, thin the sauce with the water.
  • Serve with feta and a poached egg, sprinkle with salt and pepper, and enjoy.

28. Toasted Gnocchi Bites

Ingredients

  • 1 16-oz. package potato gnocchi,
  • 3/4 cup all-purpose flour
  • 2 large eggs
  • 3/4 cup Italian seasoned bread crumbs
  • 2/3 cup grated Parmesan cheese
  • 1 tsp. Italian seasoning
  • 3/4 tsp. salt
  • 1/2 tsp. pepper
  • canola oil, for frying
  • marinara sauce, for serving

Directions

  • Add the gnocchi to a pan of boiling water, cook well and then drain and let cool.
  • Add the flour to a bowl, and then beat the eggs in another bowl, combining with a tablespoon of water.
  • Add the breadcrumbs to a third bowl, and mix with Italian seasoning, Parmesan, salt, and pepper, before adding the gnocchi into the flour, then the egg, then the breadcrumb.
  • Once coated, add the gnocchi to a plate lined with parchment paper.
  • Add oil to a skillet and heat over medium heat. Wait until the oil is hot and fry the gnocchi for around 2-3 minutes. Remove with a slotted spoon, drain and serve with marinara sauce.

29. Lobster Gnocchi

Ingredients 

  • 2 ½ lb lobster cooked and meat removed – keep the shell
  • ½ onion medium-large
  • 1 carrot large, approx 100g
  • ½ cup water 120ml
  • ¼ tsp thyme – dried is fine 
  • ¾ cup heavy cream
  • 1 tsp cornstarch or cornflour
  • 1 oz parmesan 25g, grated

Directions

  • Peel and chop the potatoes into chunks and add to a pan of water to boil. Once boiled, reduce the heat to a low boil and cook for between 7 and 10 minutes. Drain, mash and set to one side.
  • Start the lobster sauce by tossing the shell over medium heat for a couple of minutes.
  • Dice the onions and carrots, add water to the pan with the lobster shell, and then add the carrot, thyme, and onion to bring to a boil, and then reduce to a simmer. Cook for between 10 and 15 minutes.
  • Cook the gnocchi in the pan.
  • Once the carrots are cooked, remove the lobster shells and blend the stock-vegetable mixture before adding cream and simmering for a few minutes. 
  • Add the parmesan and lobster, and stir well while cooking for a minute or two.
  • Remove the cooked gnocchi with a slotted spoon and add to the sauce before serving.

  • 1 package Delallo Gnocchi Kit
  • 1 tbsp olive oil
  • 2 cloves minced garlic

  • Heat the olive oil, and then add the garlic. Cook for 2 minutes and add the Italian seasoning, salt, pepper, and crushed tomatoes, stirring well to combine these. Heat until simmering.
  • Reduce the heat and add the gnocchi and parmesan cheese, stirring well.
  • Sprinkle with mozzarella, and add the slices of mozzarella and pepperoni in layers.
  • Bake for around 30 minutes and serve with basil.

  • 1/2 cup whole milk ricotta
