Single Lady Apple Pie

Yields: 1 pie

  • 3 tbsp almond flour
  • 3 tsp coconut oil, melted
  • 1/2 tsp vanilla
  • 1/2 cup green apple, diced
  • 1/2-1 tbsp almond butter
  • 1 tbsp coconut butter, melted
  • cinnamon to taste
  • salt to taste

Pre-heat oven to 350.

For the crust, combine almond flour, 2 tsp coconut oil, vanilla, cinnamon , and salt.

Press crust against sides and bottom of a 2×2 inch ramekin dish (or other small oven-safe dish), making sure it comes all the way to the top of the sides (not that this really matters).

In a separate bowl, combine apples, 1 tsp coconut oil, almond butter, coconut butter, salt and cinnamon until the apples are coated.

Cover crust with apple mixture.

Bake for 15 mins.

Allow to cool for 5 mins. If you can wait that long.
