  • ¼ cup extra virgin olive oil
  • 1 medium onion
  • 2 carrot
  • 4 garlic cloves
  • 2 tsp ground cumin
  • 1 tsp curry powder
  • ½ tsp dried thyme
  • 1 can of diced tomatoes
  • 1 cup lentils
  • 4 cups vegetable broth
  • 2 cups water
  • 1 tsp salt, more to taste

Method:

  • Add chopped carrot and onion to oil and cook for 5 minutes.

  • Cook the lentils water. Meanwhile, add the salt and onion to olive oil to the pan, and cook for 4-5 minutes. Cook the garlic for 30 seconds, and then add the water and lentils.

Method:

  • Cook celery, onion, and carrots with onion over a high heat stir for 4-5 minutes, and reduce heat. Cook for 4-5 more minutes, add the garlic and lentils, and cook for 2 minutes, stirring all the time.
  • Add the red wine vinegar and cook for 2 minutes before adding the mustard, stock, and salt. Simmer, add thyme and bay leaves, and cook for 30 minutes.
  • Drain, remove thyme, and season to taste.

  • 2 tbsps olive oil

Ingredients:

  • 1 ½ Cups Lentils
  • 4 Cups water
  • 4 tomatoes
  • 1 large bunch parsley
  • ⅓ cup red onion 
  • ⅓ cup fresh mint
  • 1 tsp salt
  • 1 tsp cinnamon
  • 2 tsp allspice
  • 3 Tbsps olive oil
  • ¼ cup lemon juice 
  • Cracked Pepper 

Method:

  • Cook lentils, drain, and set aside. Chop tomatoes, parsley, onion, and mint, and add lentils, lemon juice, olive oil, salt, and spices. Mix, chill, and serve.

31. Lentil Salad With Mint And Yogurt

Ingredients:

  • 2 cups cooked lentils 
  • 3 cups spring veggies
  • 3 tbsps red onion-
  • 1–2 garlic cloves
  • ¼ cup mint leaves
  • 2 tbsps olive oil
  • 1 lemon
  • Salt and pepper
  • Yogurt sauce (optional)

Method:

  • Cook the lentils and steam the veg. Place in a bowl with mint and garlic, toss with lemon zest, juice, and oil, and season as needed.
  • Add yogurt sauce if desired, mix and serve.
